Ingredients:
- 900g - 2 lbs bone-in chicken thighs or drumsticks (or chicken breast)
- 1 tablespoon olive oil – Oil of choice – I used coconut
- 1 large white onion, finely chopped
- 2 garlic cloves, minced
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional, for heat)
- 1 bay leaf
- 1 sprig thyme (or ½ teaspoon dried)
- 2 cups 240 ml chicken broth
- 1 cup water
- Potatoes, peeled and diced I used new potatoes
- 2 medium carrots, sliced
- 2 ears fresh corn, cut into thirds. I used baby corn
- 1 cup frozen peas
- ½ cup spinach leaves (optional, for freshness)
- ¼ cup fresh cilantro, chopped (plus extra for garnish)
- ½ cup 120ml heavy cream (or ¼ cup heavy cream + ¼ cup coconut milk for balance)
- Juice of 1 lime (plus extra wedges for serving)
- Salt and black pepper to taste
