Easy Peasy Weeknight Dinner--Taco Salad! We love this recipe, as it's fast, easy to prepare, and made with common kitchen ingredients. We hope you love it as much as we do! Easy Peasy Taco Salad Ingredients: - 1 packet of taco seasoning - 1 pound ground beef - 1 head of iceberg lettuce, chopped - 1 onion, chopped - 15 to 20 cherry tomatoes, halved (or 2 Roma tomatoes, chopped) - 1 can of Ranch Style Beans (or your preferred beans) - 10 ounces cheddar cheese (adjust to taste) - 12 ounces Catalina dressing (adjust to taste) - 9.25-ounce bag of regular Fritos Directions: 1. Prepare the taco beef according to the instructions on the taco seasoning packet. Once cooked, set aside to cool. 2. In a large bowl, Combine the chopped lettuce, onion, cherry tomatoes, beans, and cheddar cheese. 3. Add the cooled taco beef to the salad mixture and toss to combine. Note: This salad makes a generous portion. If you don't plan to eat it all in one sitting, do not add the Catalina dressing or Fritos to the entire bowl. Instead, scoop out a portion for serving and add the dressing and Fritos before serving. Store the leftover salad in the refrigerator for up to a couple of days, and add the dressing and Fritos each time you serve it.
