MOM'S STYLE CHIVDA
INGREDIENTS
2 cups poha chivda
1/2 cup peanuts
1/4 cup almonds
1/4 cup cashewnuts
1/4 cup kishmish
1/4 cup makhana
1/4 cup melon seeds
10 nos curry leaves
Salt to taste
1 tbsp Sugar
1 tsp red chilly powder
1 tsp amchoor powder
Oil for deep frying
METHOD
Heat oil in a kadahi when it is medium hot.
With the help of a strainer deep fry chivda till crisp amd set aside on a kitchen towel
Similarly deep fry peanut, almonds, cashewnuts, kishmish, makhana, melon seeds and makhana seperately.
In the end fry curry leaves.
Mix all the ingredients add salt, sugar, red chilli powder and amchoor powder.
The chivda is ready, allow it to cool at room temperature.
Store it in air tight container.
Chakli Recipe Details
Ingredients:-
For Butter Chakli,
4 tbsp rice flour
1 tbsp gram flour
1 tsp ajwain
1 tsp cumin
½ tsp turmeric powder
Salt (as per taste)
½ tsp hing
2 tsp white sesame seeds
2½ tbsp unsalted butter
1 tbsp maida
Water (as needed)
Oil
For Masala Chakli,
4 tbsp wheat flour
1 tbsp besan
1 tbsp maida
1 tsp chili flakes
1 tsp white sesame seeds
½ tsp black pepper
salt (as per taste)
1 tsp garlic powder
1 tsp oregano
2½ unsalted butter
Oil
For Pepper Chakli,
1cup cooked rice
2tbsp besan
salt (as per taste)
½ tsp red chili powder
½ tsp turmeric powder
1pack of maggi masala
2tsp white sesame seeds
Oil
Method
For Butter Chakli,
Take 4tbsp rice flour, 1tbsp gram flour, 1tsp ajwain, 1tsp cumin, ½ tsp turmeric powder, salt (as per taste), 1/2 tsp hing, 2tsp white sesame seeds, 2½ tbsp unsalted butter, 1tbsp maida. Knead the dough using water (as required). Now, allow the dough to rest for a while.
For Masala Chakli,
Take 4tbsp Wheat Flour, 1tbsp besan, 1tbsp maida, 1tsp chili flakes, 1tsp white sesame seeds, ½ tsp black pepper, salt (as per taste), 1tsp garlic powder, 1tsp oregano, 2½ unsalted butter. Knead the dough, add water (as required). Allow the dough to rest for a while.
For Pepper Chakli,
Grind the 1cup cooked rice along with some water for the thick consistency.
For dough, take thick paste of rice, 2tbsp besan, salt (as per taste), ½ tsp red chili powder and mix it well. Allow the paste to rest for a while.
Now, grease the mould with oil.
Now pour the dough/paste inside the mould. Press the dough on a clean butter paper. Then pick-up the chakli slowly and deep fry in a medium-hot oil for frying till crisp.
Enjoy hot and crispy chakli when cooled, alternatively store it in a air tight container for weeks.
Methi Mathri Recipe
Serves: 4
Preparation Time: 10
Cooking Time: 10
Course: Veg Snacks
Ingredients
1 Big Bowl Maida
1 Tsp Ajwain
1 Tsp Salt
1 Tsp Turmeric
1 Tsp Red Chilli Powder
1 Tsp Jeera
1 Tsp Black Pepper Powder
3 Tbsp Ghee
1 Bowl Methi
1 Tbsp Oil
1 Pinch Salt
Method
Mix ajwain, salt, turmeric, red chilli powder, jeera, black pepper powder and mix well
Add 3 tbsp of ghee and rub the fat in the flour.
Heat oil in a sperate pan and wilt the chopped methi till half cooked, add salt.
Transfer methi to the flour mixture.
Make a medium tight dough using little water.
Glaze the dough with oil to avoid scaling of dough.
Rest the dough for 10 min.
Make a cylinder of dough and cut into uniform equal portions.
With the help of palm press dough balls to make mathri discs.
Heat oil in a pan to medium hot and deep fry mathri till crisp.
Transfer the mathri on a kitchen towel.
Store it in air tight container when cooled thoroughly.
