Take your sandwich-making up a notch with this easy Smashed Chickpea Sandwich. Follow along as Women of Today founder, Camila Alves McConaughey shares her recipe for this yummy sandwich, featuring Higher Harvest by H-E-B Low Carb 5 Seed Bread.
Serving: 2 Sandwiches
Ingredients
One 15-ounce can of H-E-B Garbanzo Beans, rinsed and drained
1 celery stalk, diced
2 tablespoons parsley, chopped
3 tablespoons plain Greek yogurt or mayonnaise
½ lemon, juiced
Kosher salt and freshly ground black pepper, to taste
1 teaspoon crushed red pepper flakes
1-2 tablespoons Mild Sliced Jalapeños
Assembly
4 slices Higher Harvest by H-E-B Low Carb 5 Seed Bread
2 green onions sliced to fit the toast
Tomato slices
Arugula
Directions
In a medium bowl, add the chickpeas and using a potato masher or the back of a ladle smash about half of them. Having some whole adds more texture.
Add the celery, parsley, and Greek yogurt or mayonnaise, mustard, and a splash of lemon juice, and mix to combine. Season with salt and pepper to taste.
Add the crushed red pepper flakes and desired amount of pickled peppers to taste, and mix to combine.
To serve add a generous spoonful of the chickpea salad onto a slice of toasted bread, top with sliced tomatoes, green onions, and arugula. Top with another slice of bread.
Store any leftovers in the refrigerator for a couple of days.
