(Ingredients):
1 medium onion
3 medium tomatoes
2 eggs
½ tsp turmeric
1 tbsp tomato paste
Salt
Black pepper
Fresh cilantro (Optional)
Cooking Instructions:
1. Finely chop the onion and sauté it in a pan.
2. Blend the tomatoes until smooth and set aside.
3. Add ½ tsp turmeric and 1 tbsp tomato paste to the onions.
4. Pour in the tomato puree and let it cook for about 3 minutes on low heat to evaporate the excess water.
5. Crack two eggs on top of the mixture and cook for another minute.
6. Season with salt, black pepper, and add chopped cilantro for extra flavor.
7. Serve and enjoy!
