Recipe :
Eggless Chocolate Brownie Cake
Preparation Time: 20 minutes + Cooling Time
Cooking Time: 30 minutes
Ingredients:
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
250 gm. dark chocolate, chopped
3/4 cup buttermilk
150 gm. butter at room temperature
5 tbsp. caster sugar
1 tin condensed milk
1 tsp. vanilla extract
1/4 cup walnuts, chopped (optional)
For the ganache:
1 cup cream
2 cups chopped dark chocolate
2 tbsp butter]1 tsp vanilla essence
Method:
Grease and line two 7” round tins with baking paper.
In a bowl mix all the dry ingredients, the flour, baking powder and baking soda and sieve thrice to make it uniform.
Melt together the chocolate and butter over a double boiler.
Set your oven to heat at 180 C.
Put in the condensed milk, buttermilk and the vanilla extract and beat again for 2 minutes.
Mix the liquid ingredients into the in the flour and mix until all the flour is mixed into the liquid. Mix in the walnuts.
Pour the batter into the 2 tins, tap the tin once or twice to make the batter uniform, scatter the nuts all over on the top and bake for 30 minutes. Remove from the oven, cool for 2 hours at least.
To make the ganache, warm the cream, add in the chopped chocolate and mix well till the chocolate is completely melted. Mix in the butter and vanilla essence and mix well. Cool in refrigerator for 2 hours.
Level the cooled cakes. Cover the base in ganache, top with 2nd cake. Cover the whole cake in ganache. Pipe out swirls or garnish as desired. Serve.
