This cornbread recipe has elote corn kernels baked together. This video also has the traditional cornbread featured as well. Both cornbreads are very delicious because of incorporating the unusual ingredients like mayonnaise and Mexican crema. It's perfect for snacking or potluck or picnic or with a big bowl of chili.

1/2 tsp baking soda
2/3 cup whole milk
2/3 cup Mexican crema
1/4 cup mayonnaise

4 tbsp melted unsalted butter
2 large eggs
1 tsp vegetable oil
1 cup loosely packed fresh corn kernels (5 oz)
1 tbsp finely chopped cilantro
2 – 3 tsp Tajin (lime-flavored chili powder)
3 tbsp Cotija cheese crumbles (2 oz)
