Bánh Giò/ Vietnamese Rice Pyramid Dumpling is a originally a steamed street snack from Northern Vietnam. It’s a small, savory snack great any time of the day, made with a rice flour outer layer, ground pork, mushroom and onion filling and all with a special aroma from a banana leaf wrapper.
It was very modest but delicious snack really worth looking forward to.
Many steps are involved in this recipe, but they’re pretty simple to follow.
Bánh Giò/ Vietnamese Rice Pyramid Dumplings Recipe:
Ingredients:
Dough:
200g rice flour
25g tapioca starch
35g cornstarch
1-liter chicken broth
1tsp chicken powder
1tsp sugar
1/2tsp salt
1Tbsp oil (I forgot to pour it into my mixture.)
Filling:
40 g wood ear mushrooms
1 medium onion
200g minced pork
2 1/2 Tbsp minced shallot
3 Tbsp cooking oil
1/2 tsp sugar
1/4 tsp salt
1/2 tsp ground pepper

Mold: 100ml Take Away Food Container
(You can use any mold you have.)
Banana leaf(Optional)
NOTE: Cover steamer with a piece of wet cloth if you don't use banana leaves.
