For the vinaigrette, whisk together: 1/3 cup avocado oil juice of 1 lemon 2 tablespoons honey 2 tablespoons fresh mint leaves, chopped salt and pepper to taste Drizzle the vinaigrette over the salad and top with feta cheese, toasted cashews, and purple pansies for an extra pop of color 😉 Sourdough Peach (nectarine) Crisp: 8 peaches (I used nectarines) , peeled, cored and sliced 3/4 cup maple syrup 1/4 teaspoon salt 3 tsp cornstarch For the batter: 6 Tablespoons butter 1 cup all-purpose flour 1 cup brown sugar 2 teaspoons baking powder 1/4 teaspoon salt 1/4 cup sourdough starter 3/4 cup heavy cream ground cinnamon Mix batter ingredients together. Ferment in refrigerator overnight. The next day, set it out while you prepare your peaches. Preheat oven to 350 degrees. Mix peaches with maple syrup and cornstarch. Bake in preheated oven for 10 minutes. Remove peaches from oven and place spoonfuls of the dough over the entire cobbler. Sprinkle well with cinnamon and bake for 40-45 mins or until golden. Serve with whipping cream or ice cream! Peach Salsa: 1 gallon tomatoes 1/2 gallon peaches 5 large onions 8 jalepeno peppers 8 banana peppers 6 bell peppers 3/4 cup vinegar 1/3 cup real salt 1 1/2 tablespoons cilantro 3 tablespoons lime juice 2 teaspoons cumin 2 cups brown sugar 1 cup clear jel 1 cup cold water Chop the tomatoes, onions, and peppers into small pieces and cook for 10 mins. Then add vinegar, salt, cilantro, lime juice, cumin, and cook approx 30 mins. Add brown sugar and stir until dissolved. Mix clear jel with water and add to salsa. Cook until thick, then pour into jars and can (I do mine in the oven at 225 for 30 mins). Chocolate Chip Cookies: 3/4 cup sugar 3/4 cup brown sugar 1 cup butter, softened 1 tsp vanilla 1 large egg 2 1/4 cups flour 1 tsp baking soda pinch of salt 2 cups chopped dark chocolate flaky salt Beat sugars, butter, vanilla, and egg until creamy. Add dry ingredients and mix until incorporated (batter will be thick). Stir in chocolate chunks. Spoon onto baking sheet and sprinkle with flaky salt (this really makes the cookies pop). Bake at 375 for 8-10 mins or until golden brown. Some links are affiliate links.
