Ever heard of Champotón, Mexico? You won't find this small coastal city in the state of Campeche in the guidebooks. I get a warm welcome from Chachi, who is somewhat of a town matriarch and knows everybody! She invites to her home for a big family dinner and pulls out all the stops, including making a gigantic tamal, called a pibipollo, that cooks in an underground pit. Back in my kitchen, I show you how to make simpler versions of these dishes so you can get a taste of Champotón, too.
