Today, I’m joined by the brilliant Kenji Morimoto and we’re transforming a humble butternut squash into a probiotic-packed kimchi that’s bursting with flavour and good-for-your-gut microbes!
Whether you’re new to fermentation or a seasoned pro, this recipe is simple, low-waste and so versatile.
To make it yourself, you’ll need:
• 1 butternut squash, grated
• A handful of spring onions, chopped
• A thumb-sized piece of ginger, finely grated
• 3-4 garlic cloves, minced
• Half an apple, grated (for a touch of sweetness)
• 1-2 tablespoons of red chilli flakes or gochugaru
• 1 tablespoon of red or white miso
• 1-2 teaspoons of salt
• 1 tablespoon of sugar or honey
