GF CINNAMON ROLL RECIPE:
Dough:
1/2 cup psyllium husk
1-1/2 cup water warm
4 tsp yeast
2 TBS honey
3/4 cup warm milk
2 cups millet flour
1/2 cup sorghum flour
2-1/4 cup tapioca starch
1/2 cup 1-1 GF flour blend
1/2 cup maple syrup
3 tsp baking powder
3 tsp xanthan gum
2 tsp salt
2 eggs
1 stick + 1/4 stick melted butter
1/3 cup heavy cream
Filling:
2 sticks softened butter
1/2 cup maple syrup
3 TBS ground cinnamon
Icing:
1/2 cup cream cheese
1/2 stick butter
3/4 cup maple syrup
1 tsp vanilla extract
How to make it:
1. Prep psyllium husk and yeast. Mix psyllium husk and warm water, set aside. Mix yeast, warm milk, and honey, set aside.
2. Combine all dry ingredients; millet flour, sorghum flour, tapioca starch, GF flour, baking powder, xanthan gum, and salt in mixing bowl.
3. Add in wet ingredients; eggs, butter, maple syrup, risen yeast, psyllium husk gel and mix well for 10 minutes with a dough hook.
4. Once mixed, lightly flour countertop with GF flour blend. I use Bob’s Redmill GF flour.
5. Take half of the dough and roll it out evenly into a rectangle. For thicker rolls, don’t spread as thin. Spread filling mixture.
6. Using a pizza cutter, cut your dough in even rows about 1-1/2 inches wide. I eyeball this part, it doesn’t have to be perfect. Once cut, roll each piece up into a cinnamon roll. Do the other 1/2 of the dough the same way. Place in pan and let rise for one hour or until doubled in size in a warm place.
7. Once the rolls have doubled in size, preheat oven to 350°F and drizzle warm cream over the rolls.
8. Bake rolls for 20 min covered and remove the covering for the remaining 15 min of baking.
9. Mix icing ingredients together, combining the cream cheese and butter first followed by the remaining ingredients.
10. Lather your warm cinnamon rolls, with icing and enjoy!
Leftovers can be stored in the fridge for 1 week or in the freezer. For the freezer options store without icing on the rolls if possible.
