面具麵包跟佛卡夏的食材很類似,都主打加入大量橄欖油,也會放入各種義大利香料、香草,或是醃漬的橄欖、番茄、大蒜,比起經常做成大麵包的佛卡夏,面具麵包因為經過切割,脆殼的占比更大。
我好喜歡那些發酵後像是被停格的嘴巴,還有拉不夠開又被麵團闔上的眼睛,老實說看久了也是有夠恐怖,好像真的有生命一樣。畢竟酵母也是真的有活力,所以跟酵母一起創作「鬼臉」真的是特別栩栩如鬼。

I made fougasse bread for Halloween! I love how the dough, after fermenting, looks like mouths caught in a freeze-frame and eyes that tried to open but got closed up by the dough again. Honestly, the more I stare at them, the creepier they get, almost like they’re alive. After all, yeast really is a living thing, so making ‘ghost faces’ together with it feels like bringing spooky little creations to life.

○麵團 Dough
高筋麵粉 200 g
bread flour, 200 g
全麥麵粉 100 g
whole wheat flour, 100 g
溫水 210 g
warm water, 210 g
速發酵母 3 g
instant yeast, 3 g
鹽之花 3.5 g
flower of salt, 3.5 g
橄欖油 2 大匙
olive oil, 2 Tbsp
義大利綜合香料 1 小匙
Italian seasoning, 1 tsp
○灑料 Topping
橄欖油 1 小匙
olive oil, 1 tsp
鹽之花 1 小匙
flower of salt, 1 tsp

●Making the Dough
1. In a mixing bowl, add water, olive oil, salt, bread flour, whole wheat flour, instant yeast, and Italian seasoning.
2. Stir and mix with chopsticks until it forms a dough.
3. Cover with a wet cloth and let the dough rest for 30 min.

4. Flour your hands.
5. Pull up one side of the dough. Fold it over to the opposite side.
6. Turn the mixing bowl to 90°.
7. Repeat the pulling and folding of the dough.
8. Turn the mixing bowl to 90° again.
9. Repeat the steps on all four sides of the dough.
10. Cover with a wet cloth and let the dough rest for 30 min.

11. Repeat these steps a total of three times.
12. Cover with a wet cloth and let the dough rest for 30 min.

13. This is the final fold for the dough.
14. Line the baking sheet with baking paper.
15. Flour the baking mat.
16. Place the dough on the baking mat.
17. Divide the dough into 6 portions.
18. Shape each piece into a ball.
19. Roll out the dough to about 1 cm in thickness.
20. Make slits in the dough with a steak knife.
21. Pull and stretch the dough to create a fun ghost face.
22. Get creative and make different fun faces.
23. You can also try to make a leaf shape.
24. Let the dough rise in a proofing box for 40 minutes.

●Preheating the Oven to 450℉/230℃
25. Generously drizzle olive oil and brush it evenly over the surface.
26. Generously sprinkle flower of salt.
27. Transfer to the preheated oven.
28. Bake at 450℉/ 230℃ for 20 min.
