Onion soup is a basic french dish that we cook at home quite often. In restaurants it is usually served in a special soup bowl called tête de lion - lion's head. I will show in this video how to make an easy home-made onion soup version even if you don't have this heat resistant bowl
Onion soup ingredients for 2-3 portions:
- 300 g (10.6 oz) onion
- 3 tbs oil
- 50 g (1.8 oz) butter
- optionally 50 ml (1.7 fl.oz) madere / dry red wine / porto
- around 600 ml - 1 l (20.3-33.8 fl oz) / beef or veal stock
- dry bread
- 100 g (3.5 oz) hard cheese
- thyme
- bay leaf
- optionally garlic
Recipe:
✔ Slice onion half rings
✔ Start frying at high temperature
✔ When it starts getting darker, add salt, thyme, bay leaf, lower the temperature and fry covered for at least 20 minutes
✔ Add madere or wine, deglaze pan (simply release caramelised bits stuck to bottom)
✔ Add stock and boil uncovered for at least 25 minutes, can be up to 2 hours
Dressing 1 if you have heat resistant bowl for the oven:
✔ Put soup in a bowl
✔ Put dry piece of bread on top to cover fully the surface
✔ Add lots of cheese
✔ Bake it in the oven for 3-5 minutes at highest temperature
Dressing 2 in a plate in you DON'T have heat resistant bowl for the oven:
✔ Put lots of cheese on each piece of dry bread
✔ Bake it in the oven for 5-7 minutes at highest temperature
✔ Serve bread immidiately in a plate with a very hot soup
