Gas and groceries are going up with inflation, but we still have a say in what we spend on groceries. Today I'm making 4 recipes I created using as many fresh ingredients as possible from Walmart - all for under $13. I hope I can inspire you and give you a few ideas for how to feed your family fresh delicious colorful food without breaking the bank!
Grocery List: total = $12.53
Yeast - $1.52
Flour - $1.00
Corn - $ .84
Shredded Mozzarella - $1.98
Choriso - $1.42
Onion - $ .71
Cilantro - $ .48
Carrots -$ .98
Pork Sausage - $2.20
Potato - $ .60
1 gravy packet $ .32
Green Onions - $ .48
Cabbage - $2.04
Tomato - $ .25
Soy Sauce - $1.86
Choriso Pizza:
Crust -
1/2 cup warm water
1 and 1/4 tsp yeast
1 Tbs sugar (optional)
1 and 1/2 cup flour
2 Tbs Oil
1 Tbs sugar (optional)
1/2 tsp salt
Preheat oven to 400 degrees Fahrenheit. Combine and knead ingredients until a dough forms. Spread onto a pizza pan and let rise 15 min. Then stick in preheated oven to par bake for 10 minutes or until dough springs back when you press it - should be very light in color still.
Toppings:
1/2 a tube of choriso (about 1/2 cup)
1/2 cup corn
1/2 cup chopped onion
1 bag shredded mozzarella (6 oz)
1 Tbs chopped fresh Cilantro (optional)
Cook choriso, corn, and onion in a small pot until thoroughly heated. Spread toppings on parchment cooked crust. Sprinkle entire 6 oz bag of shredded cheese on top. Switch oven to broil and put pizza back in until cheese is melted and crust is golden brown (about 2 minutes). Sprinkle chopped Cilantro on top for garnish and added flavor and serve. Serves 2 or 1 VERY hungry person.
Sausage Meatball Stew:
1/2 lb pork sausage
1 gravy packet
1 cup cold water
1 Potato
1/2 bag carrots (2-3 medium carrots)
1 cup corn
1 Tbs margarine or butter (optional)
salt
pepper
Bake your potato in the microwave about 5 minute or until soft. Roll the sausage into small balls and place in a heated pot. Flip meatballs after 1-2 minutes. Peel and chop carrots into chunks and add to meatballs. Stir. Add water and gravy packet and stir. Add corn and stir until heated through. Slice potato in half and mash. Add butter if desired and salt and pepper to taste. Pour Stew mixture on top and serve with chopped green onion for garnish.
Choriso Tacos:
Tortillas:
1 and 1/2 cup flour
2 Tbs Oil
1/2 cup warm Water
A pinch of salt
Mix ingredients, then roll out 1 inch balls of dough on a floured surface until they are about 5 inches in diameter (about the size of your hand). Preheat a pan on medium heat. Put each tortilla in the pan and flip when one side starts getting colored. Place under a tea towel to stay warm and steam (this will soften them) until ready to serve.
Filling:
1/2 a tube of choriso (about 1/2 cup)
1/2 cup corn
1/2 cup chopped onion
1 Tbs chopped fresh Cilantro (optional)
1/2 cup shredded cabbage
1 chopped tomato
Heat choriso and corn in a pan until cooked and heated through. Top each tortilla with choriso corn mixture, finely chopped onion, shredded cabbage, tomato, and Cilantro. Serves 2 people 3 tacos each.
Steamed Potstickers:
Wrappers -
1 and 1/2 cup flour
1/2 cup boiling water
1/4 tsp salt
Combine flour and water with fork, then when cooled some mix by hand. Pinch off 1/2 inch balls and roll out as thin as possible. Add some flour to your surface to help prevent sticking, but add as little as possible. You want a sticky dough as that will help when you're sealing.
Filling -
4 cups thinly sliced Cabbage (a little less than half a small cabbage)
2 grated medium carrots (about 1 cup)
1/2 lb Pork Sausage
Thinly sliced Green Onions for garnish
3 Tbs soy sauce
1 tsp sesame oil (optional, but highly recommended)
In a pot, combine cabbage, carrots, soy sauce, and sesame oil. Cook for about 10 minute on medium heat stirring occasionally to avoid burning. Turn off the heat, add in the sausage and mix. Spoon 1 heaping Tbs into each wrapper and pinch them shut. In a shallow pan, coat the bottom lightly with oil, heat on medium until warm, then add in Potstickers. After 1-2 minutes flip (or when the side has turned golden brown). Add 1/4 cup of water and put a lid on to steam for 5 minutes. Remove to a plate.
Dipping Sauce -
3 Tbs Soy sauce
1/4 tsp chopped garlic (optional)
1/4 tsp chopped green onions
Combine soy sauce, chopped garlic, and green onions and serve in a small bowl with the Potstickers. Enjoy!
