Champaran Handi Banaras Special Chicken 🍗
Ingredients:
750 g chicken (with bone)
5 medium size onions (thinly sliced)
3 medium tomatoes (chopped)
2 tablespoons ginger- garlic paste
1 piece of garlic (sabut)
1/4 cup mustard oil
Fresh coriander leaves (for garnish)
Spices:
1 teaspoon of turmeric powder
1 teaspoon red chili powder
2 teaspoon coriander powder
1 teaspoon garam masala powder
2 teaspoon kashmiri red chili powder
1/4 teaspoon cumin seeds
1/2 cinnamon stick
3-4 cloves
1-2 black cardamom
3-4 red chili (sabut)
Salt to taste
Instructions:
Step 1: Prepare the Pot
Heat mustard oil in a heavy-bottomed handi (clay pot) or a regular pot over medium heat.
Step 2: Marinate the Chicken
In a bowl, marinate the chicken with ginger-garlic paste, onion, tomatoes, turmeric powder, red chili powder, coriander powder etc all spices and salt and add mutard oil and add some water and mix well.
Step 3: Cook the Chicken
Add the marinated chicken to the handi and stir well.
Cover the handi with a tight-fitting lid and with the help of dough.
Let it cook for 20 minutes on high flame and then reduce the heat to low for another 30 minutes and let it simmer for another 5 minutes and remove the dough.
Step 4: Final Touch
Once the chicken is tender, sprinkle the fresh coriander leaves.
Step 5: Serve
Serve hot with steamed rice, roti, or naan.
