Garlic Parmesan Spaghetti Squash
Ingredients:
1 medium spaghetti squash
1/2 cup Parmesan cheese (shredded or grated)
1/2 cup pecorino Romano cheese (shredded or grated)
1 Tbsp garlic powder
2 Tbsp olive oil
2 Tbsp butter
2 Tbsp melted butter
2 Tbsp Italian seasonings
Salt and pepper to taste
Red pepper flakes, optional
Instructions:
Preheat oven to 350 degrees.
Prick spaghetti squash around outside with a paring knife.
Place in shallow baking dish and place in preheated oven for approximately 1 hour, or until soft.
Remove from oven and allow to cool slightly before handling.
Cut in half, long way.
Scoop out and remove interior and seeds.
Using a fork, shred the inside of the spaghetti squash. It should easily come apart and look like spaghetti noodles. Leave approximately 1/2 inch of the squash shell intact so the filling has a good foundation to rest in.
Set “noodles” aside and add butter, olive oil, cheeses and seasonings. Combine well.
Fill interior of empty squash shell with seasoned “noodles”.
Sprinkle red pepper flakes, if desired.
