Ingredients:
3 cups warm water (add more if needed)
7½ cups 100% whole wheat flour (reserve ½ cup for working dough)
1 or ½ tsp sea salt
1/3 cup honey or 2 tbsp sugar
1 tbsp yeast (fast-rising or traditional)
2 tbsp butter, margarine, or oil (room temp or warm)
Extra butter for greasing pans and spreading on top of bread.
Method:
Activate Yeast: In a small bowl, combine warm water, yeast, and honey/sugar. Let it sit for 5 minutes until foamy.
Mix Dough: In a large bowl, combine flour (7 cups), sea salt, and yeast mixture. Gradually add butter and mix with a spoon or mixer until a dough forms.
Knead: Knead dough for about 10 minutes. Add the remaining ½ cup of flour as needed until dough is smooth and elastic.
First Rise: Form dough into a ball, make a cross on top (optional), and cover. Let it rise in a warm spot for 20-30 minutes. A viewer’s tip is to let it rise in the oven with just the light on.
Second Knead & Rise: After it rises, knead gently and let it rise again for another 20 minutes.
Shape & Pan: Butter your hands, divide the dough, and shape into balls. Place in buttered loaf pans, cover, and let rise until just above the pan (about 20-30 minutes).
Bake: Preheat oven to 350ºF. Bake for 30-35 minutes, depending on your oven.
Cool & Serve: Remove from pans, brush with butter, and let cool on a rack. Enjoy with butter, jam, or molasses!
Tip: Freeze extra loaves in a freezer bag to keep them fresh.
