其實蔥花大餅跟蔥燒餅的做法概念是很類似的,只是蔥花千層大餅追求更大的量與更多的層次,整個層次的折疊方法是我沒有做過的。而麵團攪打、發酵都不要求精緻的操作手法。千層大餅的食材也都很基本,蔥花千層大餅也是很讚的早餐,分切後冷凍起來,隔天要吃早餐再用電鍋或烤箱加熱即可,非常適合小家庭做來吃! . Giant Chinese Scallion Bread, or Da Bing, is my favorite! I’ve only ever had Da Bing in Taiwan, but it’s the perfect treat for satisfying afternoon hunger. The vendor offers a variety of Da Bing flavors and other types of bread, but scallion bread is my ultimate go-to. I never imagined I could make it at home, but when the craving strikes, anything is possible! This homemade version of scallion bread is simple to prepare and incredibly delicious. I’m sure I’ll be making it again and again! . 食材 Ingredients▼ ○麵團 Dough 中筋麵粉 400 g all-purpose flour, 400 g 水 230 g water. 230 g 砂糖 20 g sugar, 20 g 酵母 4 g instant yeast, 4 g ○油酥 Filling 橄欖油 3 大匙 olive oil, 3 Tbsp 中筋麵粉 1 大匙 all-purpose flour, 1 Tbsp 鹽 1 小匙 salt, 1 tsp 白胡椒粉 1/2 小匙 ground white pepper, 1/2 tsp ○蔥餡與灑料 Scallion Filling and Topping 蔥花 160 g scallion, 160 g 中筋麵粉 1 大匙 all-purpose flour, 1 Tbsp 白芝麻粒 1 小匙 white sesame, 1 tsp . ■中文完整圖文食譜: https://bit.ly/4fuMiQe . 步驟 Instructions▼ . ●Making the Dough 1. In a mixing bowl, add water, sugar, flour, and yeast. 2. Mix all ingredients on low speed for about 3 min initially. 3. Cover and let the dough rest for 5 min. . ◆5 min. later◆ 4. Continue kneading on medium speed for about 5 min. 5. Shape the dough into a ball. 6. Coat the mixing bowl and dough with vegetable oil. 7. Cover and let the dough rise for 40 min. . ●Making the Filling 8. Add oil, flour, salt, and ground white pepper. 9. Mix well. It is oil filling. . ●Making the Scallion Filling 10. Chop 2 bunch of scallions. 11. Add flour. 12. Mix until well combined. ◆40 min. later◆ 13. Add salt, oil, and an egg. 14. Mix well. . ◆ 40 min. later◆ 15. Press and roll out the dough to 0.5 cm thick rectangle. 16. Spread a layer of oil filling evenly. 17. Evenly spread out the filling. 18. Fold the bottom third of the dough over. 19. Gently press the dough. 20. Fold the up third of the dough to close the scallion filling. 21. Gently roll out the middle of the dough which is thickest. 22. Spread a layer of oil filling evenly. 23. Evenly spread out the scallion filling in the middle 1/3 part. 24. Fold the right third of the dough over the scallion filling. 25. Spread a layer of oil filling evenly. 26. Evenly spread out the scallion filling in the right part. 27. Fold the left part of the dough over the scallion filling. 28. Close the seam of the dough. 29. Brush egg wash over the surface of the dough. 30. Brush some water on the surface. 31. Sprinkle sesame seeds over the surface of the dough. 32. Gently roll the dough to stick sesame on the dough. 33. Transfer the dough to an oiled flat pan. 34. Cover and let the dough rise for 40 min. . ◆40 min. later◆ 35. Cook over low heat for 10 min with the lid. . ◆10 min. later◆ 36. Flip over the dough. 37. Drizzle some oil around the dough. 38. Cover and cook for 10 min. . ◆10 min. later◆ 39. Flip over the dough again. 40. Add some water to the side of the pan. Cover and cook for 5 min. . ◆5 min. later◆ 41. Cook until golden brown. 42. Remove the bread from the pan. 43. Cut and divide into 8 portions. 44.
