Inspired by a vision of the innovative whisky master Dr Bill, the aim was to realise the opulent flavours of an ice cream parlour in a single malt. After extensive experimentation, Dr Bill and Master Blender Gillian Macdonald combined a single malt matured in bourbon casks with whisky from casks with a high vanilla content. These special oak casks were deliberately toasted to enhance the vanilla flavour.
