Gluten Free Greek Yogurt Muffins 1 c plain Greek yogurt ( plain regular yogurt can be used as well) 1/2 c milk 5 Tbsp coconut oil 2 eggs 1/2 c coconut sugar 1 3/4 c oat flour ( process 1 3/4 cups of whole oats in a high speed blender until fine) 1 1/2 tsp baking powder 2 tsp ground cinnamon 1 tsp vanilla Preheat oven to 350° and prepare a muffin pan (enough for 12 muffins) by coating the inside of the cups with a small amount of coconut oil to help them release once baked. In a small saucepan heat the yogurt, milk and coconut oil just until it gets warm and melts the coconut oil. In a mixing bowl combine the eggs and coconut sugar and mix well then add remaining ingredients and stir until well incorporated. Transfer batter in equal portions to the muffin tin cups and set aside. Crumb topping: 2 Tbsp butter, melted 3 Tbsp coconut flour 1/4 c coconut sugar 1 tsp ground cinnamon Combine listed ingredients and mix well; portion out equally among the cups of muffin batter. Bake in the preheated 350° oven for about 24 minutes. Remove from oven and allow to cool slightly before removing them from the muffin tin.
