A big plate of gnocchi is such a romantic, impressive meal, and by the time you've microwaved 2 potatoes til soft, you're like halfway there, assuming you own a potato ricer.

1. Microwave a pound of potatoes until soft
2. Run them through a ricer while still hot
3. Once cooled, add one egg, plus salt, pepper, and up to 1 cup of flour
4. Mix minimally, roll into 4 logs, and cut into equal pieces
5. Cook gnocchi in gently boiling water until each piece floats
6. Finish with the sauce of your choice
