These are Great Grandma Henrietta Spilman's Famous Potato Rolls.
1 pkg yeast (I use 2 TBL)
1 cup cup mashed potatoes
1 cup sugar
1 cup butter (originally was shortening)
3 1/2 cup warm water
1 TBL salt
12 cups flour
Mix first six ingredients in large bowl, add 4 cups flour mix well, let rise about one hour (proofing phase), add balance of flour, (add flour until it makes a stiff dough) Knead about 10 minutes, let rise until double, work down, let rise again and work into pans, let rise and bake at 375 for 10-12 min
Make racket ball size rolls for total of 45
The mashed potatoes are just that - a cooked mashed potato.
