If you have onions that are starting to grow green tops, don't throw them out. You can plant in your garden or in some pots in a sunny window. Over time, the onion bulb will continue to grow and the green tops it produces can be used like green onions.
Don't waste your food - regrow it!
Onions generally grow once, they are harvested, and eaten. If you want seeds from your onions, you need to overwinter the onion bulbs and replant in the spring. This produces a tall seed pod with thousands of seeds on it. Or, in my case since these are hybrid onions from the store, I want to encourage the onion plant to produce green tops that I can use for cooking and dehydraying.
To harvest, you simply snap off a green leaf top or use a sharp paring knife to cut it off.
