Guava Cheese (Perad) Recipe Guava Cheese, also known as Perad, is a delightful and traditional sweet treat made from ripe guavas. This fruity confection is a must-try for those who love experimenting with unique flavours. Cooking it in a nonstick pan makes the process easier and ensures perfect results, as it helps you judge when the mixture is ready. Below are two versions of the recipe: a small-batch version for beginners and a larger quantity for those already familiar with the process. Small Quantity Recipe This version yields approximately 22 pieces, ideal for first-time preparation. Ingredients: 1/2 kg ripe guavas 1 teaspoon clarified butter (ghee) 1/2 teaspoon lime juice Powdered sugar (equal to the measured guava puree) Method: 1. Peel the guavas, cut them in half, and boil until soft. Remove from water, deseed, and puree the pulp. 2. Measure the guava puree and use an equal quantity of powdered sugar. 1 and 1/2 cup guava puree equal quantity of  powder sugar: 1 and 1/2 cup ( I used a 200 ml cup and  a 100 ml cup) 3. In a nonstick pan, combine the guava puree and powdered sugar. Stir until well mixed. 4.On a low flame, cook the mixture, stirring constantly. Add lime juice and a drop of red gel color. Cook until the mixture reduces to half. 5. Add 1 teaspoon of ghee and continue stirring until the mixture leaves the sides of the pan and forms a soft, non-sticky ball. 6. Brush a tray with ghee, pour the mixture, and spread evenly. When slightly warm, mark straight lines. Cut into squares once firm. --- Large Quantity Recipe Perfect for celebrations or gifting, this version makes a generous batch. Ingredients: Ripe guavas (to make 6 cups guava puree) Powdered sugar (equal to the guava puree quantity, 6 cups) 2 tablespoons ghee 1/2 teaspoon lime juice Red gel color (optional) Method: 1. Peel, halve, and boil the guavas until soft. Remove from water, deseed, and puree the pulp. 2. Measure 6 cups of guava puree and use an equal quantity of powdered sugar. 3.In a nonstick pan, mix the guava puree and powdered sugar. Stir until combined. 4 Cook on low flame, stirring constantly. Add lime juice and a few drops of red gel color. Cook until reduced to half. 5. Add 2 tablespoons of ghee and continue stirring until the mixture leaves the sides of the pan and forms a soft, non-sticky ball. 6. Brush a tray with ghee, pour the mixture, and spread evenly. Mark diamond or square shapes when warm. Cut once firm. --- Testing the Consistency The mixture should leave the sides of the nonstick pan. Drop a small amount into a bowl of water.
