**Haitian Fried Turkey: Tasso Turkey Step by Step**
**Ingredients for Cleaning Turkey:**
- 7 to 8 lbs Turkey
- 1 lime
- 1 cup of vinegar
- ½ cup of lemon or lime juice
- 1 tablespoon of salt
- Boiling water
**Ingredients for Seasoning Turkey:**

- 2 cubes of Maggi (chicken-flavored bouillon)
- 1 bonnet pepper (optional)
- Parsley and thyme, tied together
- ⅓ cup of oil
**Instructions for Boiling Turkey:**
1. Place the turkey on the stove over medium/high heat (around 7–6).
2. Cook until all the epis is absorbed, stirring occasionally (about 45 minutes).
3. Add 1 to 2 cups of water and let it boil for about 30 minutes.
4. Once the turkey is tender and fully cooked, turn off the stove.
**Instructions for Frying Turkey:**
1. Heat 3 cups of oil in a frying pan or deep fryer to a temperature of 7–8.
2. When the oil is hot, carefully add the turkey.
3. Cook on all sides until golden brown, then remove it from the heat.
**Instructions for Making the Sauce:**
1. Strain the juices from the boiled turkey and add them to a pot.
2. Heat the pot over medium heat (around 6) and let it simmer.
3. Add two tablespoons of tomato paste or purée.
4. Incorporate chopped bell peppers and onions.
