HALLOWEEN STUFFED PEPPERS (pg 38)

6 large peppers
1lb hamburger
2Tbsp chopped onion (I used dehydrated)
1tsp salt
1/8tsp garlic salt
1 cup cooked rice
1 can (15oz) tomato sauce
3/4c shredded mozzarella cheese
Cut thin slice from stem end of each pepper. Remove seeds and membranes; rinse. Cut Jack O Lantern faces from peppers using small knife. Set aside.
Cook hamburger and onion until hamburger is light brown; drain. Stir in salt, garlic salt, rice, and half of tomato sauce; heat through.
Stuff each pepper with filling and stand upright in an ungreased baking dish. Pour remaining sauce over peppers. Cover; cook in a 350 oven for 45 minutes (I cooked for 30 mins). Uncover; sprinkle with cheese and cook 15 minutes longer.
PUMPKIN SHAPED PARTY CHEESE BALL (pg 324)

2 - 8oz packages cream cheese, softened
4oz crumbled blue cheese
4 oz finely shredded cheddar cheese (plus more for the outside of the cheeseball)
1/4c chopped onion (I used green onion)
1Tbsp Worcestershire sauce
Special equipment - rubber bands or butchers twine, bell pepper stem
Places cheeses in a mixer bowl; let stand at room temperature until softened. Beat in onion and Worcestershire sauce on low speed. Beat on medium speed, scraping bowl frequently, until fluffy. Cover and refrigerate for 1 to 2 hours.
Shape mixture into a large ball. Roll in additional shredded cheddar cheese. Cover tightly with plastic wrap. Wrap rubber bands or tie butchers twine around the cheeseball to achieve pumpkin-like indentations. Refrigerate for at least 2 more hours or overnight. Remove rubber bands or twine. Decorate top with a bell pepper stem.
PUMPKIN COOKIES (pg 267)
1c sugar
1c canned pumpkin (solid pack, NOT pumpkin pie filling)
1/2c shortening
1Tbsp grated orange peel
2c all purpose flour
1tsp baking powder
1tsp baking soda
1tsp ground cinnamon
1/4tsp salt
1c mini chocolate chips (I used these instead of 1/2c raisins and 1/2c chopped nuts)
Heat oven to 375. Mix sugar, pumpkin, shortening, and orange peel. Stir in flour, baking powder, baking soda, cinnamon, and salt. Stir in mini chocolate chips.
Drop dough by teaspoonsful onto ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. Immediately remove from cookie sheet; cool.
