With rising temperatures, the birch sap harvesting season kicked off rapidly this year. We head into the boreal forest to tap Alaska Paper Birch trees and bring our collected sap back to the cabin to finally try our hand at making birch syrup over the course of several days. At the end, it may not have been worth the time and resources, however, we still enjoyed taste testing the rich and decadent syrup on French toast.
