Soya Sattu Kabab is a delicious, high-protein vegetarian kabab made with soya granules and sattu (roasted gram flour). It’s a healthy and flavorful snack that can be enjoyed with chutney or used in wraps and sandwiches.
Ingredients:
For the Kabab Mixture:
• 1 cup soya granules (or soya chunks, ground into granules)
• ½ cup sattu (roasted gram flour)
• 1 boiled and mashed potato
• ½ cup finely chopped onions
• 2 tbsp chopped coriander leaves
• 1 tsp ginger-garlic paste
• 1-2 green chilies, finely chopped
• ½ tsp cumin powder
• ½ tsp coriander powder
• ½ tsp garam masala
• ½ tsp red chili powder
• ½ tsp chaat masala
• ½ tsp amchur (dry mango powder)
• Salt to taste
• 2 tbsp oil (for shallow frying)
• Water (for soaking soya granules)
Instructions:
1. Prepare Soya Granules:
1. Soak soya granules in hot water for 10 minutes. If using soya chunks, soak and then grind them into granules.
2. Squeeze out excess water and keep them aside.
2. Prepare Kabab Mixture:
1. In a mixing bowl, combine soya granules, sattu, mashed potato, onions, coriander, green chilies, and ginger-garlic paste.
2. Add all the spices: cumin powder, coriander powder, garam masala, red chili powder, chaat masala, amchur, and salt.
3. Mix everything well to form a dough-like consistency. If the mixture feels dry, add 1-2 tbsp water to bind.
4. Divide the mixture into small portions and shape them into flat round kababs.
3. Cooking the Kababs:
• Shallow Fry Method:
1. Heat 2 tbsp oil in a pan on medium flame.
2. Place the kababs and cook until golden brown and crispy on both sides (about 3-4 minutes per side).
• Air Fryer Method:
1. Preheat the air fryer to 180°C (350°F).
2. Brush the kababs with a little oil and air-fry for 12-15 minutes, flipping halfway.
• Baking Method:
1. Preheat the oven to 200°C (400°F).
2. Arrange the kababs on a baking tray, brush with oil, and bake for 20-25 minutes, flipping halfway.
