I can't begin to tell you how much my hubby loves meatloaf. I think he would eat it 3-4 times a week if I made it, then eat meatloaf sandwiches with the leftovers. It's not a hard entree to prepare, it's easy, simple, and a downhome comfort food. We like it with brown gravy, so that is what you will see me making it with today. If you like the ketchup, tomato sauce topping, by all means, use that. Just leave off the gravy. But you might still want the gravy for those creamy, dreamy, mashed potatoes. Directions below.

Meatloaf
1 1/2 lbs ground chuck
1/4 cup onion, chopped, or more if you want
1 egg
salt & pepper to taste
bread crumbs, I used about 1/2 cup
1/4 half & half
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 Tbsp parsley
Preheat oven to 425 degrees
Mix all ingredients. Line a sheet pan with foil and spray with nonstick spray.
Turn mixture out onto pan. Shape into a loaf. Bake 40-50 minutes.
Mashed Potatoes
Cube potatoes, as many as you need for your family. Cover with water, add salt to taste, boil until tender. Drain water from pot. Leave potatoes in hot pot to dry up excess water. With wire whisk on hand mixer or stand mixer, whisk potatoes until fluffy. Add butter to taste. Pour in buttermilk a little at a time until fluffy.
