RECIPES:
Mini cake
Ingredients:
4 medium size carrots
120 ml freshly squeezed orange juice
80 ml vegetable oil
2 large eggs
225g all purpose flour
1 tsp vanilla extract
1 orange zest
pinch salt
2 tsp baking powder
100g sugar
powdered sugar ( optional )
Instructions:
-Clean and cut carrots and place in blender together with vegetable oil and orange juice. Puree
-In a bowl, add pureed mixture, add the eggs, flour, sugar, baking powder, orange zest, vanilla extract and salt. Mix well
- Scoop the batter into the mold ( cupcake mold )
-Bake for 175°C for 30-35 minutes until cooked through. You can test with toothpick.
-Let it cool down, remove from the mold and sprinkle with powdered sugar.
-Enjoy
Kale and Spinach Pesto with Shrimp
Ingredients:
pasta ( 2 person )
8-10 pcs of shrimp
100 ml olive oil
150g spinach
100g kale
4 cloves of garlic
basil
1 lemon
50 ml raw cashew
salt and pepper
Instructions
- add cashews to the food processor and pulse until crumbled
-add spinach, kale, basil, lemon juice, olive oil, garlic, salt and pepper.
- Pulse until the spinach, kale and basil re Finley chopped and the pesto is smooth.
- You can adjust the taste to your liking
- Cook pasta
- While the pasta is cooking, in a pan, medium heat, melt the butter and add thinly sliced garlic.
- add shrimp and cook for about 30 to 60 second on each side
- sprinkle with salt and pepper, a squeeze of lemon and set aside
-add in the cooked pasta and pesto. mix well
- serve the pasta, top with shrimp, grated parmesan or cheddar cheese and parsley
