Holiday Ales are supposed to be something special so this week we feature a beer and a recipe with Sweet Potatoes as the special ingredient.
This is an old recipe of Mike's which he resurrected for the craziness that is 2020. This is a Festbier style wort, mashed with an ample quantity of sweet potato. These are standard sweet potatoes that you'd find at the supermarket; none of that canned stuff here.
In this video, Mike discusses why he uses sweet potato and more importantly how he preps, mashes, and brews with the sweet potato. This beer wasn't spiced at all during the brewing process so Mike makes an ethanol extracted spice tincture to add more character for those people that like spiced ales.
