Today I was blessed to have Chef Johnny @TexasStyleCuisine Winner of the 2023 Ultimate Beef Loving Texan on our show to teach us how to make fresh backyard bbq sausage.
We go step by step to learn all the equipment and recipes to get started!
We took some leftover brisket trimmings, cheddar cheese and jalapeños and made 10 pounds of some delicious sausage!
Ingredients:
- Send 9 pounds of cubed brisket trimmings and 1 pound of fat through a course grinder.
- Season with:
6 tbsp of Salt
4 tbsp of Black Pepper
4 tbsp of Granulated Garlic
6 oz of Tomato Paste
- Mix well and re-grind with 1 pound of high temp cheddar cheese and 6-8 chopped jalapeños
- Pack all the ground meat into a sausage stuffer
- Add a casing to the stuffer horn and tie off one end
- Crank the handle to fill the casing with sausage mix
- Twist sausage links to your desired length
- Grill / Smoke them up right then or freeze them for later
- Enjoy!
