Welcome back to episode 3 of my Baking Series: “From Classic to Iconic” where I show you how to turn timeless, classic desserts into modern and elegant entremet cakes.
In this episode, I wanted to recreate the classic French Opera Cake!
I really love this cake so I thought it would be fun to turn it into an entremet cake. And I honestly think it turned out amazing!
Several of my friends (who tries all my cakes) said that this one was one of their favourites of the cakes I've made. And I agree, it does taste amazing!
Because this also isn't just another Opera Cake. This version contains some new elements and has more textures. I promise you won't regret trying it!

This video teaches the following baking techniques:
- How to assemble entremet cakes and get a clean cake cut
- How to make a fudgy ganache
- A smooth French buttercream
- A velvety chocolate cremeux
- And a shiny mirror glaze
The cake consists of:
- Cocoa Coffee Biscuit
- Joconde Almond Sponge Cake brushed with Coffee Syrup
- Chocolate Crunch with Coffee
- Dark Chocolate Ganache
- French Coffee Buttercream
- Almond Mousse with Coffee
- Glaze
- Milk Chocolate Crémeux Spiral
- And chocolate decoration
