I had no idea about Anisakis, but before I knew it, it had made its major debut. And I can't believe you've risen to be the king of the food poisoning world. I'm sure you must have eaten a lot of it in my life. But now that I know that, I vowed never to eat raw mackerel.

What happens if you eat live anisakis?
Symptoms such as severe abdominal pain and vomiting occur. The reason why it is painful is that the anisakis that enters the stomach is bitten by the anisakis from inside the stomach, which causes an allergic reaction that results in severe abdominal pain. The allergen secreted by the live anisakis reacts with the stomach wall, causing an allergic reaction and pain in some people.

Anisakis (larvae) are parasites of various fish and shellfish, including yellowtail, bonito, sardine, Pacific saury, squid, and salmon roe, with mackerel being the most common.



The life cycle of anisakis is as follows.
(1) Hatch in the sea. (Stage 2 larvae)
(2) Ingested by krill, the intermediate host (3rd stage larvae)
(3) Parasitized by fish and shellfish such as mackerel and squid (standby host) in the third instar larvae.
(4) Whales and dolphins (terminal hosts) eat the larvae and they become adult worms.



What happens if you eat it?
Eating anisakis can cause severe abdominal pain and vomiting. However, not everyone who eats anisakis will get it. The pain is caused by an allergic reaction, so only about 3-4% of people will experience pain. Most people are likely to eat it without knowing it.



Is there any medicine against anisakis?
Taking Seirogan, which contains wood creosote, slows down the movement of anisakis, eases the pain, and also makes it easier to remove the anisakis. A paper is also available in English.

Anisakiasis and hospital treatment
When you go to a hospital for suspected food poisoning caused by anisakiasis, you will be given a gastroscopy and have your stomach tossed around while you ooh and aah. So, for the time being, if you feel severe pain in your stomach after eating seafood, it would be a good idea to take Seirogan. In the meantime, you should go to the hospital even after taking it.

Anisakis are often found near the internal organs of fish (around the blood).

How to cope with the problem: Temperature sensitivity
Heat at 70℃ or above, or at 60℃ for more than 1 minute, and it will die.
Freezing at -20℃ for 24 hours will kill them.



Vinegar and salt are useless against anisakis.
It is meaningless to just vinegar the anisakis, such as shime saba (mackerel). It is better to freeze the anisakis before making shime saba (mackerel). Anisakis is so strong in acidity that it can grow to adulthood in the stomach of a whale. Salting is also ineffective.



Anisakis are hard.
Anisakis is quite hard, so even if you bite it, it often does not kill you. It is like rubber with elasticity.
