Chitting potatoes is the process of letting your potatoes sprout before you plant them in your garden. Chitting takes between 4 to 6 weeks and is something you can do to speed up the growing process for your potatoes. But remember, you don't have to chit your seed potatoes. If you want you can simply plant them in the garden without chitting them and they will grow just fine. They will just take a couple of weeks longer to start growing.
