Top sirloin cap is a tender and delicious cut of beef perfect for grilling or roasting. This cut also goes by a few different names including is picanha or coulotte. It has a fat cap on the top of the cut that cooks off a bit when you sear and adds amazing flavor when you roast.
To cook, first sear lightly seasoned top sirloin cap in a cast iron pan then move the pan to an oven preheated to 425°F and cook for 15-20 minutes until it reaches an internal temperature of 125°F for medium-rare.
