BREAKFAST 2 of 7 days: (Makes 1 serving) Roasted chopped sweet potato (baked in 1 T oil on cookie sheet) 1/2 cup cottage cheese 2 plums, chopped Cinnamon Top sweet potato, fruit, and cheese with cinnamon. LUNCH (Eat over 3 to 4 days) Rice & Peas Indian-Style With Carrots 1 cup dry rice (3 overflowing cups cooked) 1 slice bread or 1 to 2 plums 3 to 6 T Oil (to taste) Directions 1. Boil 1/2 bag split peas and 1 1/2 carrots for 40 minutes uncovered in a generous amount of water. 2. Add salt, pepper, and any spices desired (see video) to taste as it cooks. 3. Mixture will thicken as split peas break down. 4. Add oil after split pea mixture is cooked to desired consistency. 5. Boil rice separately and serve on the side. DINNER (Makes one serving) 1 T oil 1/7 head cabbage (eyeball it), thinly sliced 1 julienne sliced medium carrot 1/4 cup BBQ sauce 1/2 cup roasted peanuts 1 cup cooked white rice Directions 1. Add oil to saute pan. 2. Add cabbage, peanuts, and carrots to pan over medium heat and saute for 3 minutes. 3. Add BBQ sauce and turn off heat. 4. Serve over or next to cooked rice.
