Ingredients:
(serves 3)
500g (1lb) spaghetti
3l (or quarts) water
3-5 cloves garlic minced
500g (1lb shrimp)
1 finger hot chili pepper sliced fine
2 parsley stems
Finely minced parsley for garnish
1tbsp extra virgin olive oil
Parmigiano Reggiano finely grated
1tbsp + 1tsp salt
Method
1. Place water in a large pot, add 1tbsp salt and bring to a boil over high heat.
2. Dust the shrimp with 1tsp salt and let it marinate.
3. Once the water comes to a boil, put the pasta in and let it cook for 1 minute less than three packet instructions.
4. Place a skillet over medium heat with some olive oil in it.
5. Add in the parsley stems and the moment they start to bubble, remove and discard them.
6. Add in the garlic and chili pepper and saute until the garlic gets fragrant.
7. Add in the shrimp and make sure they're cooked evenly on both sides.
8. The pasta should be ready now, so put the pasta into the skillet and add 1 Cup of pasta water.
9. Stir continuously to emulsify. Turn off the heat and serve topped with parsley and Parmigiano.
