This is the blend that took my baking to the next level and I use it to make everything from muffins to Yorkshire pudding, flaky pie pastry to Strawberry Shortcake. It works in muffins, quick breads, pancakes, waffles, crepes and more. It even works for some cookie recipes.

300 g sweet rice flour
300 g potato starch, sifted
200 g sorghum flour
200 g millet flour
