¼ cup (56g) vegetable oil
½ cup (30g) onion grated
1 ¼ teaspoons (9g) fine sea salt
1 teaspoon (2.5g) white pepper
Remaining ingredients
3 ½ pounds (1600g) New (red) potatoes
¾ cup (172g) mayonnaise - plus more to achieve a smooth consistency
½ small carrot shredded, - for garnish
3 tablespoons flat leaf Italian parsley - for garnish

½ small green or red bell pepper - finely diced
1 rib celery - finely diced
