Hello and welcome back, today I’m going to show you how easy it is to make Barbacoa at home. This is my go-to recipe; I think everyone raves about this recipe because it has an underground meat pit resemblance. It’s tender, juicy, melts in your mouth, and bursting with flavors. Most of the time, I pair this recipe with a salsa verde, but in today's recipe, I’m sharing a roasted salsa roja that is perfect for everything. Dip it, smother it, or just lean back and let me feed you King-style salsa, LOL, you're warned, Corazón. This recipe seasoning style is good for 8 to 10 pounds of beef
5 pounds of chuck
3 pounds of beef cheek

Season beef with: 1 tsp salt,1/2 Tbsp black pepper, 1 Tbsp Mexican oregano

And set it to the side

Next blend
2 bay leaves
4 to 6 garlic cloves
1 large onion
2 Caribbean peppers or jalapeño
2 green onions, 2 Anaheim peppers
2 cups of water
1/2 Tbsp salt
1 Tbsp Mexican oregano
4 cloves of spice
1 Tbsp of coriander (1 tsp if you aren’t crazy about it)
3 chiles de arbol
And blend until smooth

Pressure cook 1 hour, release the steam carefully, press cancel, then press the slow cook button and set for two hours
*once you release the pressure, open the lid and remove 2 cups of broth. We need this for the salsa :)
*You can easily slow-cook this for 8 hours on high

Spicy roasted salsa ( salsa Tlaquepaque)
10 tomatillos
5 tomatoes
1 onion
4 to 6 garlic cloves
1 Chile guajillo
2 chiles morita
4 chiles de arbol
2 Tbsp instant coffee (add 4 Tbsp if you love it : )
4 chiltepines or Chile pequin (optional)
1 tsp salt
1 tsp black pepper
2 cups of beef broth
2 bay leaves
Cook 10 minutes or until you see the color change


For the toppings, you’ll need: 1 large chopped white onion, a small bunch of cilantro, limes, and a side of sliced cucumbers


Don’t forget the corn tortilla and some LARD for an authentic flavor, and boom, done!
