Making carnitas for tacos. Carnitas are really easy and delicious. You could use this for nachos like I did in my @epicurious video or serve them over rice.
Carnitas
4-6 ppl
3# pork shoulder, cut in 2 inch cubes
2 small oranges, quartered
6-8 cloves garlic, chopped
2 bay leaves
salt
black pepper
vegetable oil or lard, as needed
Place pork in a small stockpot. Squeeze juice out of oranges on top of the pork add rinds to the pot. Put garlic in the pot. Season well with salt and pepper. Add bay leaves. Top with melted lard or vegetable oil. Place on high heat and let come to a simmer. Lower heat to medium and stir the pork. Stir every 5 minutes until done for about 1 hour.
