**Important steps
1. Soak in vinegar for 20 minutes.

3. Set the oven to 80 degrees for 1 hour.

Use 200 degrees for 15 minutes.
5. Turn the skin up and put the meat down.
Use 200 degrees for 15 minutes.
The longer the skin, the more comforting it will be. But the meat will not be juicy anymore. It will be rather dry.
