🍪Almond Cookies:
200 g ( 7.25 oz ) almond flour
40 g ( 1.5 oz ) wheat flour
120 g ( 4.2 oz ) egg white
250 g ( 9 oz ) icing sugar
🎂French meringue:
60 g ( 2.1 oz ) egg white
60 g ( 2.25 oz ) sugar
🍪Cake cookies:
1. Combine egg white with icing sugar, mix.
2. Mix almond flour with wheat flour.
3. We send almond flour with wheat to egg white with powdered sugar. We mix.
🍪Prepare meringue:
1. We send egg white into the bowl of the combine, beat, send sugar in small portions. Beat until firm peaks.
2. We send the French meringue to the almond mass and gently knead.
3.Using a pastry bag with a 10 mm nozzle, place the cookies in a spiral on a baking sheet with parchment, 5-6 cm (2.4 in) in diameter
4. We bake at a temperature of 160C (325F ) 18-20 minutes.
5. Take them out of the oven, remove the cookies from the baking sheet and leave them on the parchment.
6. Sprinkle with a thin layer of powdered sugar.
