Khoresh-e fesenjoon is one of the well-known and loved Iranian dishes from Gilan province and is It is flavored with pomegranate molasses and ground walnuts and spices like turmeric, cinnamon, and Saffron and served over a bed of steamed rice. It is made during the fall and winter months because of the richness of the flavors and its seasonal main ingredients; walnuts and pomegranate molasses. It is a very nutritious food that gets its anti-oxidants from the pomegranates and beneficial oils from the walnuts.
Ingredients:
2 lb chicken
1 lb walnuts
2 oz brewed saffron
1 medium onion
12 fl oz pomegranate molasses
4 cinnamon sticks
1 tsp turmeric
1 fl oz brewed saffron
1 tbsp brown raw sugar or to taste
2 tbsp vegetarian ghee or olive oil
Rice:
16 oz basmati rice
3 quarts of water
6 tbsp salt
3 tbsp oil
2 oz brewed saffron
