Cabbage sauce is a delicious and healthy Ghanaian dish that is rich in flavor and pairs perfectly with boiled yam. This recipe combines fresh vegetables, aromatic spices, and smoked fillet tuna to create a hearty and satisfying meal. Ingredients: • Cabbage – 1 medium-sized (shredded) • Tomatoes – 3 large (blended) • Red habanero peppers – 2-3 (adjust to taste, blended) • Onions – 2 large (1 blended, 1 chopped) • Spring onions – 1 handful (chopped) • Ginger – 1-inch piece (blended) • Garlic – 3 cloves (blended) • Green capsicum (bell pepper) – 1 (sliced) • Smoked fillet tuna – 2 medium-sized pieces (flaked) • Adobo all-purpose seasoning – 1 tablespoon • Mixed spices – 1 teaspoon • Curry powder – 1 teaspoon • Nutmeg – ½ teaspoon • Salt – to taste • Vegetable oil or palm oil – ½ cup • Yam – 1 medium-sized tuber (peeled and boiled) Instructions: Step 1: Preparing the Base 1. In a blender, combine tomatoes, red habanero peppers, one onion, ginger, and garlic. Blend until smooth. 2. Heat vegetable oil or palm oil in a saucepan over medium heat. 3. Add the chopped onion and sauté until soft and translucent. Step 2: Cooking the Sauce 4. Pour in the blended tomato mixture and stir well. 5. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the raw tomato taste is gone. Step 3: Adding Spices and Vegetables 6. Season the sauce with Adobo seasoning, mixed spices, curry powder, nutmeg, and salt. Stir well to combine. 7. Add the sliced green capsicum and spring onions, then let it cook for another 5 minutes. Step 4: Adding Cabbage and Protein 8. Add the shredded cabbage to the sauce and stir to combine. Cover and allow it to cook for about 10 minutes, stirring occasionally. 9. Add the flaked smoked tuna fillets and mix gently. Let it simmer for another 5 minutes to allow the flavors to blend. Step 5: Serving the Dish 10. Remove from heat and serve the cabbage sauce hot, paired with boiled yam.
