Hello everyone 😊, Mid-Autumn Festival is coming very soon and I want to show you this super healthy and delicious Black Sesame Snowy Mooncake with Pine nuts 松子黑芝麻冰皮月餅, it contains 2 very healthy ingredients black sesame powder and pine nuts.
Black sesame powder are packed with nutrients. They are rich in the vitamins B and E and thiamine. They contain minerals like copper, manganese, selenium, molybdenum, zinc, iron, phosphorus, calcium, and magnesium, as well as tryptophan, an amino acid. They contain the lignans sesamolin and sesamin which are effective antioxidants. They are rich in fiber so It is not surprising to find that an increasing number of people use it to promote health.
Pine nuts are rich in magnesium, iron, antioxidants, zinc, and protein, which can help with diabetes management, heart health, and brain health.

For the filling:

Granulated white sugar 50g
Coconut oil 70g
Salt 1/4 tsp
Cooked glutinous rice flour 25g
Honey 40g
Pine nuts 75g
Cooked glutinous rice flour 50g (For the mooncake coating to prevent from sticking to the mooncake mold)
