Remove the seeds (this is where a lot of the heat is) and set aside for stuffing. Allow your cream cheese to come up to room temperature. Cook sausage until no longer pink and add in onion. Season as needed. Add mixture to cream cheese and mix to incorporate. Add cheddar cheese and mix to incorporate. Taste as you go and adjust seasoning as needed. Using a small spoon, stuff jalapenos and then wrap each piece in 1 piece of center cut bacon. (Depending on size of the peppers, you may need only 1/2 a piece of bacon) Season the outside of the bacon with your BBQ seasoning or whatever your favorite is. Place in a 375 degree oven or smoker and cook for 30 minutes or until the bacon is nice and browned/crispy. Serve with ranch or blue cheese and enjoy!
