YARDIE STYLE FRY CHICKEN ⬇️
2lbs Chicken parts with skin & bones, excess fat trimmed then rinsed with lemon juice or vinegar
Mixed seasonings:
2 tbsps Maggi Chicken or All purpose seasoning (not the boullion)
2 tsps Paprika
1 tbsp Onion powder
Salt to taste (just a bit, remember the Maggi has salt)
1/2 tsp Black pepper

2 tsps minced garlic
1 small onion
bell peppers cut in strips
4 sprigs thyme
2 stalks scallion, slit lengthwise
4 pimento berries
Coating for chicken⬇️
1 cup flour
Mixed seasoning:
1 tbsp Maggi allpurpose or chicken powder seasoning
1/2 tbsp Turmeric (Use egg powder colouring if you have it, since it is more commonly used than turmeric 😁)
Salt to taste

1 cup dry red kidney beans (rinsed several times then soaked with 3 cloves garlic in 4 cups water overnight)
2 tsps salt added to pressure cooker before pouring in the soaked peas
2 1/2 tsps brown sugar
2 garlic cloves sliced thinly
4 pimento berries
2 large stalks scallion
4 sprigs Fresh thyme
1 tbsp coconut oil
1 cup Coconut milk
1 1/2 - 2 tbsps Unsalted Butter
2 1/2 cups Long grain rice, rinsed several times till water runs clear
